1. What cooking oil should I use?
A healthy cooking oil or fat is one that is chemically stable and therefore not made rancid by heat either during processing or cooking. A rancid oil has a high concentration of free radicals, these will break through the cell walls to get an organelle within the cell to yield an electron to neutralise it. When we have free radicals attacking the DNA and its transcriptors, we will literally have cells beginning to reproduce in large numbers (as usual) but these are abnormal, beginning the process of cancer. These abnormal cells will cause havoc in the body including ageing, hardening of arteries etc. Therefore NO solid vegetable fats and NO "cholesterol" free oils. They promote inflammation, promote tumour growth (the abnormal cells) and undermine immune function. So whether it is 100% corn oil or cold-pressed sunflower oil… keep away from it if pursuing health is your objective.
Olive oil, avocado (fruit/oil) are a little more stable and therefore ok for ordinary cooking. Northern Italians use lard!!!!(it is in the same category)
Butter, Ghee and Coconut oil- these are very stable, and very rich in the fat soluble vitamins A,D,E,K + minerals necessay for your body to build it antioxidant defence system, used to neutralise free radicals.
One other thing, we need to learn to heat our oils and cook food on medium heat.
2. One is required to drink 8 - 10 glasses of water a day? Does my tea and coffee make up for this since I drink lots of tea?
In one sense fluid is fluid, but then a closer look at the diuretic properties of coffee and tea to a lesser extent actually suggest that these may speed up dehydration. Secondly 8-10 glasses is not a standard. The rule of thumb is keep drinking until your urine stream is clear or almost clear. Why because if you are in Lodwar 8-10 glasses may be seriously inadequate, while if you live in Timau this might be more than enough.
3. I love fruit and vegetable juices and I do my own juicing. I believe this is a great way to feed the cells. Am I on the right track or are the high natural sugar levels bad for me? How many glasses of these types of juices can I safely drink per day?
True these may be nutrient rich, but the large quantity of fruit sugar (fructose) mean these fructose rich liquids are emptied from the stomach rapidly raising blood sugars and subsequently causing a flood of insulin in the blood-stream. Insulin is anabolic and will result in about half the excess sugar being stored as fat on the body. Secondly fruit sugar is only metabolised in the liver, frequent juice drinking will elevate liver enzymes, then lead to a fatty liver and eventually liver cirrhosis. High blood sugars and high blood insulin levels is the route to serious cardiovascular problems.
4. What is wrong with the white starches? I have tried using the wholemeal brown flours but my bread and chapatti just doesn't taste as good as the white ones do. Advise
Same thing as above (Q3), given that these lack in fibre as a result of processing, these are quickly emptied out of the stomach. Unrefined starches take a little longer to be emptied (generally 25-30 minutes maximum). They therefore will induce a similar insulin response resulting in greater fat storage, they will ultimately raise the level of the "bad" cholesterol because excess blood sugars (what is left after deposition) is sent to the muscle to "burn-off) if it is too much, the excess is sent to the liver and converted to free fatty acids and triglycerides (VLDL) this is the precursor to the LDL ("bad cholesterol). Remember studies on our hunter gatherers ( Maasai, Somali, Samburu's etc) show very low cholesterol levels, this is because starch is not a dietary feature. On the other hand hindus (vegetarians/vegans) tend to have very high cholesterol levels, that is because their diets are heavy on starch.
Also some of the anti-nutrients and enzyme-inhibitors in grains/cereals are heat stable (survive high heat cooking and even starch acids) and very active, some of these remain unsplit in the stomach and cross through the stomach lining into the blood stream causing allergic reactions, others generally cause a huge stain to the pancreas and pancreatic cancer is not to uncommon especially among cereal eaters.
5. There is a "new" Christian based nutrition plan that stipulates that we are safer and more healthier is we eat as much RAW food as possible. Comment.
Raw foods are important. Studying hunter-gatherers shows a lot of raw foods, from milk, meat, vegetables and some fruit. The reason being, enzymes in foods are heat sensitive, any temperature above 45 degrees Celsius kills them.
However, if remember this diet correctly ( I stand to be corrected) this diet seems to espouse soy/soya. After 18 months of research on soy/soya, we are convinced this is not a health food. Even in the far east surveys have shown it to be a condiment and providing no more than 1% of dietary intake among Chinese and Japanese (65% of their calories come from pork and fish respectively). The high estrogen in soy is harmful to females and males a like, its negative effect on the thyroid glad and thymus gland is well documented I also has a long list of anti-nutrients that will block absorption of calcium, iron, zinc, magnesium etc
The same diet seems to insinuate that eating meat is unhealthy and bad, that we were not designed for it.
Not true. If we are eating kienyeji meat (our beef, mutton, goat, camels qualify) that is fine, if we are eating grain fed meat, we are in trouble. About half the human cell is made up of protein, avoiding animal protein is really undermining one's cells and of course immune function.
We have canine teeth, ridged molars and incisors in both jaws. Our jaw is designed for crushing and tearing, and moves in vertical motions not sideways like a herbivore. We have one stomach, our stomach produces huge amounts of hydrochloric acid, we are incapable of digesting cellulose, not only that, the only food nutrient that begins to be broken down in the stomach is protein! Our digestive efficiency borders on 100%, our fecal matter is a fraction of what we eat, our gut does not have digestive bacteria like herbivores etc. Also groups that feed on quality protein (animal) generally are healthier, taller etc unlike grain eaters who tend to be shorter and have poorer growth.
Yes, incorporate raw foods, flee from soy, juice your non starch vegetables if you wish, but make sure you eat animal protein as part of a health lifelong eating plan.
